The Pony Cookery School
The Pony Cookery School is set in our purpose-built demo kitchen and ten station cookery school. We now offer a range of cookery experiences, from workshops and classes to tasting evenings, with chef demonstrations, hands-on cookery and time afterward to enjoy the fruits of your labour, we’ll teach you how to hone your cookery skills & learn new kitchen tricks.
All the courses feature the best produce from the South West and are taught by our trained professional team and guest chefs from the The Pony Family.

Miele, NE Appliances, 102 Kitchens, Tog Knives & Marbello.

Cooking with Spices with Angela Ardron

Having lived all over the world and travelled everywhere in between. Angela has a keen interest in spices, their history and their cultural influence on the food we eat. This led to gaining a degree in Human Geography, specialising in how food influences people and culture.
Angela is also a MasterChef Semi-finalist, with numerous recipes published as a result and has a strong focus on experimenting with different flavour combinations, sharing her recipes via her social media @moorledgekitchen.
Course Layout:
This course will explore the history of spices and how they have influenced different cultures around the world. Taking inspiration from India, you will learn how to create your own Garam Masala which you will use to cook a sumptuous Lunch to enjoy. You will then use your knowledge of spices to experiment and create some spiced goods to take home and enjoy.

Cheese Making with the Bristol Cheese Monger

We are very excited to be finally hosting cheese making classes with Oli The Bristol Cheesemonger. Oli provides the pony with a lot of our beautifully locally sourced cheese and we are thrilled to announce he will be sharing his knowledge as a former cheese maker in our cookery school.
You will be taught to make 3 different cheeses (ricotta, halloumi and a fresh cheese) enjoy a delicious cheese board of local cheeses during your class, followed by the famous Pony Sunday Roast.
You also get to take home all cheeses that you make on the day.

Spanish Tapas with Alexis John

Born in Canada, and raised by British parents, Alexis was introduced at an early age to a wide range of cultures through travel and a network of family and friends that spanned the globe. These early experiences of gatherings around the sharing of food and good conversation had a lasting effect on her, and is where her passion for food truly began.
Alexis started her culinary career working in the international food scene in Toronto. Alexis moved to Bristol in 2006 and started working at Riverstation, one of the premier restaurants of its time. Alexis developed her knowledge and skill set of every of aspect of the kitchen and thrived on the buzz of delivering high end food in a a fast pace environment.
Later running the café, deli and cookery school at Papadeli, and working at the Middle Eastern restaurant Souk Kitchen, Alexis further honed her skills of creating amazing feasts. This quickly led to her passion in sourcing the best ingredients from the SouthWest, Italy and Spain and using them to create exciting, seasonal food with big, bold flavours.
Alexis was at the forefront of the pop-up restaurant movement creating Mi Casa in 2011 . The inspiration came from wanting to socialise with food with like-minded people that shared the same passion for food and conversation. This went on to inspire numerous pop ups around the UK and beyond.
Alexis subsequently went on to create her own Catering and events company and is now Head of Food and Development for Brockley stores , Public Market and East Bristol Bakery. Her passion for food continues.

Whole Day Coastal Foraging

An immersive, whole day foraging and cooking adventure with josh Eggleton and Martin Bailey of Go Foraging.
A morning of coastal foraging in Clevedon. You’ll discover the many delicious wild edibles growing in coastal and salt marsh habitats…Searching for Sea Asters, Sea Arrow Grass, Sea Radish, Scurvy Grass, Sea Spinach, Rock Samphire and many more wonderful wild greens.
We’ll introduce you to ways of turning your foraged herbs and succulent sea veg into scrumptious meals and delightful condiments for use all year round. There will be tasters along the way and drinks to enjoy too.
We will then reconvene back at the Pony. Josh will show you how to cook something special with your wild foraged coastal greens. Lastly, we’ll enjoy our forager’s lunch together in the comfort of the restaurant.

Foraging walk with Martin Bailey and cookery class

Join Martin Bailey from goforaging.co.uk for a foraging walk around Chew Valley
Discover seasonal wild plants that can be foraged at this time of year. Martin will share his wealth of knowledge of what to eat (and what not to eat), ecology, folk law, food as medicine and lots more.
We can hope to see nettles, wild garlic and hopefully much more.
After your walk you will meet back at the Pony Chew Valley Cookery school to show you how to prepare and cook your collection of local ingredients.
You will finish with a late lunch of your spoils you have prepared and take home everything else.

Cooking with Kids
£40 per child (each child must be accompanied by a guardian free of charge)
Join us in the half term for cook alongs beginning with a garden tour picking some herbs and fruit. Followed by some morning refreshments then into the school where you will make smoothies, cookies & pasta sauce
Each child must be accompanied by a guardian and the price is inclusive of child and adult. This class is not suitable for children under the age of 8. Please make us aware of any allergies upon booking.

Sushi with Joe Fowler

How to use your seasoning/store cupboard

This course teaches you how to make the most out of your seasoning/store cupboard. In this course you will learn how to make marinades, dressings and salad cream with the items you probably already have in your cupboard. You will learn how to use, modify and apply these pantry staples to elevate your home cooking. You will learn the importance of great quality salt and how to use it properly.
You will finish with dinner in our private dining room from the spoils you have made and go home with lunch for the next day.

Tarte Tatin with Hannah Catley

Hannah Catley, owner and head baker of ‘Lockdown Loaves’ and ‘Catley’s’ in Bristol.
Formerly pastry chef of restaurants amongst London’s Chiltern Firehouse and Allegra, after 10 years in the hospitality industry she is now also a mentor for the craft guild of chefs graduate awards following achieving the highest achiever herself in 2017 amongst other accolades including The royal academy of culinary arts annual awards of excellence and competing on Channel 4’s Bake off the professionals in 2019.
Hannah will take you through all the techniques to make a perfect Tarte Tatin.
At the end of the lesson take home a perfect Tarte Tatin and all the skills to reproduce again and again.
