The Pony Cookery School is set in our purpose-built demo kitchen and ten station cookery school. We now offer a range of cookery experiences, from workshops and classes to tasting evenings, with chef demonstrations, hands-on cookery and time afterward to enjoy the fruits of your labour, we’ll teach you how to hone your cookery skills & learn new kitchen tricks.
All the courses feature the best produce from the South West and are taught by our trained professional team and guest chefs from the The Pony Family.

Tog knife skills followed by 2 course dinner in the restaurant

Join us for an engaging and interactive knife skills workshop, followed by a delightful two-course dinner in our dining room.
During this hands-on session, you'll learn the essentials of handling a knife with confidence and safety. We’ll cover proper knife grips, the art of slicing herbs with precision, and the technique for crushing and mincing garlic (and exploring the important distinction between the two). You’ll also discover how to dice vegetables and other ingredients to perfection, all while understanding the key role that seasoning plays in elevating your dishes.

The ultimate no knead sourdough & traditional classic bread baking

Our bakery tutor Charlie Chambers will show you that baking good, wholesome flavourful breads can be be fun and rewarding. Charlie has a lifetime of experience in kitchens, he won awards as a young chef in baking which fueled his love of good food and bread making. After running The Olive Shed restaurant in Bristol he went in to teaching, designing and managing professional cookery courses, teaching young chefs how to appreciate the food we make and consume.
This is a class for those with some experience of making bread and would like to take the next step to improve their baking knowledge and skills.
In this session we will:
make a no knead sourdough, discussing starter health and using the correct techniques to get the best out of your sourdough.
look at no waste methods to use up any spare starter discard by making sourdough crackers, crumpets or pancakes.
complete a classic bake. Such as, a focaccia, ciabatta, fougasse.
Take home a proving sourdough in a banneton with an established active starter, sourdough crumpets or crackers and a traditional classic bread bake.

Foraging walk with Martin Bailey and cookery class

Join Martin Bailey from goforaging.co.uk for an exciting foraging walk through the beautiful Chew Valley!
Explore the seasonal wild plants ready for foraging during this time of year. Martin will share his extensive knowledge on what’s safe to eat (and what to avoid), the local ecology, folklore, the medicinal properties of plants, and so much more.
On the walk, you might encounter nettles, wild garlic, and hopefully a variety of other wild treasures.
After the walk, head back to the Pony Chew Valley Cookery School, where you'll learn how to prepare and cook your freshly foraged ingredients.
The experience will conclude with a delicious light lunch featuring the dish you've prepared, and you'll also take home any extra ingredients you've collected.

Italian Cooking with Alexis John

Born in Canada to British parents, Alexis was exposed to a rich diversity of cultures from an early age, thanks to travel and a global network of family and friends. These formative experiences, centered around shared meals and meaningful conversations, left a lasting impression on her and ignited her lifelong passion for food.
Alexis began her culinary journey in Toronto, diving into the city's vibrant international food scene. In 2006, she moved to Bristol and joined Riverstation, one of the city's top restaurants at the time.
Her journey continued as she took charge of the café, deli, and cookery school at Papadeli, before working at Souk Kitchen, a Middle Eastern restaurant. These roles helped her perfect her craft of creating exceptional feasts and ignited her love for sourcing the finest ingredients from the South West, Italy, and Spain to create bold, seasonal dishes with vibrant flavors.
Driven by her passion, Alexis went on to establish her own catering and events company, where she continues to share her love of food.

Introduction to Bread Making

At the Pony we can teach you all about bread, what are the benefits of good bread and how to enjoy making bread that will inspire you.

She later took on the role of managing the café, deli, and cookery school at Papadeli, and worked at Souk Kitchen, a Middle Eastern restaurant. These experiences deepened her expertise in crafting delicious feasts and fueled her passion for sourcing the finest ingredients from the Southwest of England, Italy, and Spain, using them to create exciting, seasonal dishes full of bold flavors.
In 2011, Alexis was at the forefront of the pop-up restaurant trend, launching Mi Casa. Inspired by the desire to share food and conversation with like-minded people, Mi Casa led to numerous successful pop-up events across the UK and beyond.
Alexis went on to establish her own catering and events company and currently serves as Head of Food and Development for Brockley Stores, Public Market, and East Bristol Bakery. Her love for food continues to drive her work.

Cooking with Spices with Angela Ardron

Having lived all over the world and travelled everywhere in between. Angela has a keen interest in spices, their history and their cultural influence on the food we eat. This led to gaining a degree in Human Geography, specialising in how food influences people and culture.
Angela is also a MasterChef Semi-finalist, with numerous recipes published as a result and has a strong focus on experimenting with different flavour combinations, sharing her recipes via her social media @moorledgekitchen.
Course Layout:
This course will explore the history of spices and how they have influenced different cultures around the world. Taking inspiration from India, you will learn how to create your own Garam Masala which you will use to cook a sumptuous Lunch to enjoy. Please note our cookery school is upstairs with no lift or disabled access and our kitchen is fitted with Miele induction hobs.
